✨Chicken Pozole Verde recipe✨ Ingredients 🐓Chicken & Broth * 10 oz chicken breast * 4–4½ liters water (about 17–19 cups), or enough to fill a 6-liter pot roughly ¾ full * ½ yellow onion * 1 whole head of garlic, cut in half * 3 bay leaves * 2 tbsp chicken bouillon * Salt, as needed 💚Salsa Verde * 6 tomatillos * 3 jalapeños * 6 mini poblano peppers or 3 large poblano peppers * Small bunch of cilantro, about 6 stems or to taste * 2 cups reserved chicken broth * About 1 tbsp chicken bouillon 🫶Pozole * 2 (25 oz) cans hominy, 50 oz total, drained and rinsed * Shredded cooked chicken * Prepared salsa verde * Chicken broth For Serving * Shredded lettuce * Lime wedges * Tostadas, optional * Sour cream, optional * Salt, to taste Instructions 1. Make the chicken broth. Add the water to a 6-liter pot, filling it roughly ¾ full. Add the chicken breast, ½ yellow onion, halved head of garlic, 3 bay leaves, and 2 tablespoons of chicken bouillon. Bring to a boil and cook until the chicken is completely cooked through. 2. Shred the chicken. Remove the cooked chicken from the pot and set aside. Remove and discard the onion, garlic, and bay leaves from the broth. Once the chicken is cool enough to handle, shred it and set aside. 3. Roast the vegetables. Roast the tomatillos, jalapeños, and poblanos in a toaster oven for about 15 minutes, or until softened and roasted. 4. Sweat the poblanos. Place the roasted poblanos in a plastic bag and allow them to sweat for 5–10 minutes. Remove the skins and seeds. 5. Make the salsa verde. Add the roasted poblanos, jalapeños, tomatillos, cilantro, 2 cups of the reserved chicken broth, and about 1 tablespoon of chicken bouillon to a blender. Blend until smooth and fully combined. 6. Combine the pozole. Pour the salsa verde into the pot of chicken broth and stir to combine. Drain and rinse both cans of hominy, then add all 50 ounces to the broth. Add the shredded chicken last. 7. Boil and simmer. Bring everything back to a boil, then reduce the heat and simmer for about 15–20 minutes, or until the hominy has softened and the flavors have come together. 8. Taste and season. Taste the broth as it cooks and add salt as needed. The chicken bouillon already adds saltiness, so season gradually. 9. Serve. Ladle the pozole into bowls and serve with shredded lettuce and fresh lime. For an optional side, serve tostadas topped with sour cream and a sprinkle of salt. Make it your own: If you like your pozole spicier, add more chiles. You can also adjust the cilantro and seasonings to your preference. @Ninja Kitchen #pozole #souprecipes #recetasfaciles #fallrecipes #easyrecipe
