Crispy Steak Mac & Cheese 🥩🧀 Ingredients 1 lb cavatappi 16 oz mozzarella 12 oz Colby Jack 8 oz sharp cheddar 4 oz Fontina 3 tbsp butter 3 tbsp flour 12 oz evaporated milk 2 cups heavy cream 1 tsp each garlic powder, onion powder & smoked paprika 1 tsp chicken bouillon ½ tbsp Dijon Reserved pasta water 1 large ribeye or NY strip Salt, pepper & garlic powder 1 tbsp oil + 1 tbsp butter Directions 1. Cook pasta 1 min shy of al dente; reserve 1 cup pasta water. 2. Melt 3 tbsp butter, whisk in flour and cook 2 min. Slowly whisk in evaporated milk, then cream, seasonings, bouillon & Dijon. Simmer 3–5 min. 3.Turn heat LOW. Melt in 4 oz each Fontina, mozzarella, Colby Jack & cheddar (16 oz total). Save the remaining 24 oz cheese for layering. 4. Add pasta. If too thick, loosen with reserved pasta water until very creamy. 5. Add half the mac to a baking dish → 8 oz reserved cheese → remaining mac → remaining 16 oz cheese. 6. Bake uncovered at 350°F for 25–30 min, then broil 1–3 min until golden and crispy. 7. Season steak and sear in oil about 3–4 min per side. Add butter and baste. For medium-rare, pull around 125–128°F and rest 8–10 min. 8. Rest mac 5–10 min, slice steak and pile it on top. #macandcheese #comfortfood #easyrecipe #steak #cooking

Doctor told me if I eat red meat one more time, that I need to find a new doctor, which seems dramatic, considering I'm the one paying him. So today we're making a fat, juicy ribeye and some Mac and cheese. At my last appointment, he asked me how many times a week I eat red meat. I asked him if we could stick to questions that were relevant to my health. Then he asked if I ever considered becoming a vegetarian. I told him I'd rather let Mckenna's dad pack my lunch for the rest of my life. He said, who's Mckenna's dad? I look at him, and I said, don't worry about it. The weird part is, I just got my blood work back, and everything came back perfectly. So, medically speaking, I think I'm winning this argument.
