These twice baked lobster stuffed potatoes are the potato glow up we didn’t know we needed ✨ They are stuffed with our fresh lobster and smothered with cheese then baked to perfection. They’re great for game day (or any day, tbh). Recipe below-make sure you save it for later 📌 Ingredients: 4 OceanBox lobster tails, boiled 4 Russet potatoes Olive oil, for brushing on potatoes 4 tbsp butter, melted or softened & diced ¾ cup shredded mozzarella, divided ½ cup shredded Parmesan 2 tbsp sour cream 2 tbsp Dijon mustard 2-3 garlic cloves, minced Optional: paprika, Old Bay, chives, parsley Instructions: 1. To boil tails, bring to a boil enough water to cover tails. Add tails and cook 1 minute for each ounce per tail (example: 4 oz = 4 minutes). Remove from water and place in ice bath to stop cooking. Remove meat from the shell and finely chop 2 tails. Coarsely chop the other 2 tails to use as a topping. 2. Heat oven to 400F. Brush cleaned potatoes with olive oil and roast for an hour, until a knife easily pierces the potatoes to the middle. 3. Slice in half or slice off the top, depending on how you want to serve. Scoop out flesh, leaving a wall around the edge, about a quarter inch wide. 4. Add the flesh and finely chopped lobster meat to a large bowl. Add butter, ½ cup of the mozzarella, parmesan, sour cream, mustard, garlic, and other seasonings if desired. Season with salt and pepper and mix well, breaking up large chunks of potato. 5. Spoon mixture back into potatoes and top with coarsely chopped lobster meat. 6. Sprinkle with remaining mozzarella cheese and bake at 400F for 15 more minutes, until stuffing is heated through and cheese is melted
