If you have ground beef and potatoes, you need to try this. I start with the potatoes first. I peel them completely, then cut each one down into small, even cubes. As soon as they're cut, I transfer all the potato pieces into a bowl and cover them completely with water while I get the beef ready. Next, the ground beef goes straight into a hot cast iron skillet. I press the meat firmly across the bottom of the pan and let it cook before flipping it over. Then I start breaking the beef into smaller pieces, spreading it around the skillet as it continues cooking. I add the seasoning, mix it through the meat, then I remove it from the skillet and set it aside. Now I drain the potatoes, add a little oil, season them with grilling with Dad BBQ all purpose, rub, and toss until every piece is coated. The potatoes go into the same skillet. I stir and flip them until the outside turns golden and the edges get crispy. Then the beef goes back in and gets mixed through the potatoes. I cover everything with shredded cheese, close the lid, and let it melt completely. To finish, I add sour cream, Ortega mild taco sauce, and chopped cilantro.
