Almost six years ago, I was taking pictures with my kids in front of our little shack in Kahuku. Today, I’m holding an award for Best Poke in Hawaiʻi for 2026 🥹🤙🏽 Watching this video, I keep thinking about everything in between. Before Ry’s, I was in architecture. During the pandemic, Khannie and I decided to take a different direction. We wanted to build a life where our family came first, doing something we loved, with our children growing alongside us. We didn’t know where one little poke shack would take us. We were learning as we went, trying to take care of our family and make food we felt good serving people. When I get asked about our biggest failures, I sometimes have to stop and think. We definitely had struggles. But looking back, we were so focused on taking care of each other and figuring out the next step that I don’t think we realized how much we were getting through. Now those pictures mean even more to me. Our kids were smaller. Our business was smaller. So much has changed, but they’re still my reason. To Khannie, mahalo for building this life with me. To our crew and partners, mahalo for putting your time and heart into something that carries our family’s name. And to everyone who bought a bowl, brought somebody back, or shared our little business, your support became part of our family’s story. If you’re building something right now and wondering where it’s going, I hope this gives you a little encouragement. We didn’t have every step figured out either. Sometimes you only see how far you’ve come when you stop and look back. Being recognized here at home means so much. And getting to share a taste of that home with our Cali ʻohana makes this journey even more special. Come talk story and grind with us in Kahuku or Honolulu, or visit our crews in Huntington Beach, Pasadena, Lomita and Mountain View. Mahalo for helping our little shack grow. We’re grateful for the chance to keep serving you ❤️

@auntymailes is more than just one place for Hawaii people living away from home to grab local food. To me, it’s one place where memories get shared, stories get exchanged, and people connect. Back home we always say, “Come for da food, stay for da people.” When we made the decision to expand into California, I won’t lie, it was a culture shock. The business environment was way more competitive than anything I ever experienced in Hawaii. It took some getting used to, and honestly, I’m still learning. That’s why places like Aunty Maile’s mean so much to me. From our very first conversations, they welcomed us with that kind of aloha you can feel, even through simple words. No ego, no competition, just genuine support. It’s been one emotional roller coaster trying to understand the mainland market while still staying true to who we are. Hawaii will always be home for me. I don’t plan on leaving, but I do hope to build something that represents Hawaii the right way wherever we go. The good news is Aunty Maile’s isn’t the only place carrying that spirit. We’ve met other business owners out here who are doing the same thing, sharing a small slice of home with the local community. Looking forward to showing you some of them in the next episodes. Stay tuned. Aloha.

Starting 5/29/26 at 📍Kahuku Ry’s we are serving High Makamaka while supplies last! I always tell myself I going stay one forever student in everything I do. Earlier this year I made one shoyu butter garlic poke using a beer reduction. This time around I picked up some new ideas and techniques from chef Daysen @foodxjitsu at our Honolulu shop and it added one really nice local flare to this dish. This poke spesho called da High Makamaka (same exact spesho I did with da @nugencaviar collab but no caviar this time and with two extra tweaks) and only available while supplies last at our Kahuku location. Should we bring em to all locations too? Here’s how for make em: Start with da paniolo butter since that’s really da base of da flavor. In one pan over medium-low heat: * 1/2 cup @kohanarum * 5 cloves chopped garlic * 2 tbsp minced ginger * 2 tbsp inamona Reduce slowly by half so da rum concentrates and gets rich. Lower heat and whisk in: * 1 stick cold butter * 1/4 cup Kikkoman shoyu * small pinch sugar Finish with: * chopped green onion * cilantro Da inamona adds nuttiness and helps da sauce cling onto da fish. Cube up 1 lb sashimi grade ahi and season lightly with Hawaiian salt. Toss gently with just enough warm paniolo butter to coat da fish. Plate em up and garnish with green onion, ikura, and black ikura on top. Da flavor comes out buttery, garlicky, slightly smoky, herbaceous, and balanced with that caramelized sugarcane flavor from da rum reduction. Definitely one of my favorite poke creations lately. (We serving this exact dish at Kahuku but it doesn’t have the @kohanarum reduction in the one being served)

Poke means different things to different people. Over the years it’s evolved all over the world, and even here in Hawaii it continues to grow and change through every generation. Every place adds their own touch based on the people, the culture, and the taste buds around them. But for me, I always try remember where it all comes from. In this video I wanted to make poke for one North Shore legend, Aunty Moani. One real kanaka wahine that so many people respect out here. So for this one, I wanted keep em simple and make Hawaiian style poke the way I learned to appreciate it. To me, Hawaiian style poke isn’t just one label to throw around. It’s something deeper than that. It’s about using ingredients from Hawaii, keeping it humble, and respecting the roots and people that came before us. At our shops we make all kine poke inspired by modern Hawaii and all the cultures that make our islands special today. But when I make something like this, it’s always from one place of respect first. Just grateful I get the opportunity to share these kinds of moments, stories, and flavors with everybody. 🤙🏽

This might be the most perfect smashburger in Hawaii. Real talk, I usually feel heavy and kinda gross after one burger… but this one was the opposite. Clean, balanced, addicting, and built with intention. Every bite tasted premium. Even the fries different… cooked in 100% beef tallow. That’s the kind details that separate good from elite. What makes it even crazier is you can’t just pull up anytime. You gotta wait for the pop up dates, lock in a reservation, then count down till pickup at @mfburgershop. That suspense makes the first bite hit even harder. Behind it is @tommy__eats… one of Hawaii’s most viral foodies doing what he does best. Right next door is @drinkjugolife, and trust me on this pairing. Skip the soda mindset. Get the “Love” drink Jordan recommended me. That combo with the burger was next level and had me feeling good after, not sluggish. Some meals just fill you up. Some experiences stay with you. This one stay with you. Mahaloz and joke for see u aloha

Lately I been learning… what it really means to grow. Not just business… but heart. From one small North Shore poke shack, just trying for survive… to now having a little time in the mornings while we training our Kahuku crew. Life slowing down just enough to notice the little things. Today… I seen Chris @localpokebowl. Same lane, same grind… but never once felt like competition. I still remember when we was just starting out. No name, no hype, just trying for make it one day at a time. Out of nowhere, Chris came by… bought food, showed love, and kept it moving. No big introduction. No speech. Just genuine support. He didn’t have to do that… but he did. And for some reason, that always stayed with me. Years later, seeing him again… it felt full circle. This time we got to support him back, in our own small way. Standing there, holding his poke… I felt grateful in a different kind way. Because people like Chris… they remind you what this all supposed to be about. Not who’s bigger. Not who’s better. Just showing up for each other… even when nobody watching. That’s the Hawai‘i I’ll always believe in. Aloha always 🤍

We come from a family rooted in farming… so this one hit different for us. Our oldest brother, Bounmee from @haleiwaburgers was recently on the news for something that honestly doesn’t surprise us at all… but still makes us proud in a whole different way. During the floods, while everything was going crazy, he was out there rescuing dozens of animals that were literally drowning. At the same time, he’s still trying to run his business and take care of his farm… and somehow, he still made space to care for lives that couldn’t speak for themselves. That’s just who he is. This whole situation has been heavy on everyone… but especially in Waialua. A lot of the farming community out there depends fully on the land — and many lost shelters, crops, and parts of their livelihood overnight. The thing about these farmers though… they’re some of the strongest, most resilient people you’ll ever meet. They don’t complain. They don’t look for attention. They just keep going… even when everything gets taken from them. But today, we just wanted to take a moment to shine light on our big bro. Not for recognition… but to show what kind of heart he carries. Looking out for the innocent. Taking responsibility when nobody’s watching. Doing the right thing, even when he already got so much on his plate. We proud of you, braddah 🤍 📍Haleiwa Burgers

Been seeing some really heartbreaking things from back home… and it’s been sitting heavy on our hearts. To everyone who’s reached out with prayers, messages, and just checking in on our family, our team, and the North Shore shack… thank you. Truly. We don’t take any of that love for granted. We’re still in Cali until tomorrow, but our hearts already back home. Missing our people, our island, our community more than anything right now. We not anyone special… just a small business, a small family… but we care deeply. And when we get back, we just want to do our small part—show up, help where we can, and stand alongside our community as we rebuild together. That’s all we know how to do. Hold your loved ones close. Tell people you love them. None of this is ever guaranteed. We’ll see you all soon. With love, always. Aloha 🤍

Asa was our very first customer. Back when nobody really came this side unless for shrimp plates. Back when people told me don’t make poke. Back when we were struggling, hurting, and just trying to survive. I’ll always remember our hardest times, and can guarantee future me will always preach about remembering. For the first few days, nobody came. I was at the shack morning to night, just hoping. Then one late night, two braddahs sat down just to talk story. One was Asa, the other was his good friend Eddie. They showed aloha, took a chance on us, and told people. Slowly, word started spreading. That’s how everything began. This journey taught me to never forget the ones who supported you when you had nothing to offer but a dream. The ones who believed early. The ones who spoke your name in rooms you weren’t in. Success don’t come from one person. It’s built on community, love, and people who choose to uplift you. Forever grateful for you, Asa & Eddie. Day one braddahs 🤍🤙

Feb 13, 2026 — about 150 days since we took one scary step and brought our little Hawaii poke shop to California. 🤍 Today we bringing wonton chips to our Huntington Beach shop FCFS, so if you close, come thruuu gangy 😅 but more than anything, our mission still stay da same: serve with heart, respect da fish, and take care of people. When we first started in Cali, plenty Hawaii locals told me straight up — “brah, this not gonna work.” They said the clientele different, fish quality not understood, budgets tighter, and they seen plenty Hawaii-style shops try and fail. That was heavy to hear. Made us nervous. But also made us more grateful for every single person who chooses to support us. Slowly, more people started caring. Asking questions. Learning about quality. Sharing with their friends. And lil by lil, we get to help change poke culture on da continent — one bowl at a time. That’s honestly all we ever wanted. Big mahalo to @uncochad1 for da love this morning. You inspired me to share this, even though I usually stay quiet about this side of da journey. We’ve had challenges. We’ve felt pressure. We’ve caught heat. Even had moments inside our own shop that tested us. But we not here to spread negativity, and I don’t want any of our supporters doing that either. No hate back. Only aloha. Always. We just keep our heads down, stay humble, and focus on taking care of the people who walk through our doors. And we’ll always support other businesses doing it the right way, with heart and respect — shoutout to @alohaconesdenver and @unrealpoke for bringing real quality and creativity to the continent. If you rocking with us, just know we appreciate you more than you’ll ever know. This journey been unreal, and we still just getting started. 🤍

Only get one dozen limu kohu poke today, FCFS. People always ask me why so limited… and it’s simple. This kine stuff special. Limu kohu is protected and meant to be harvested with respect, not rushed or taken for granted. Serving this is our small way to bring awareness, also to serve especially to da Hawaii transplants who rush down today to da shop. Lately on the North Shore I been seeing some heavy harvesting that causing real damage, and it stays heavy on my heart. For all my Hawaii locals, please malama da ʻāina and take only what you need so our keiki and moʻopuna can still experience these same blessings. Big mahalo to my aunty Kaleo for always guiding me and asking me to help spread awareness. She’s part of the limu preservation community and I forever grateful for her wisdom and aloha. And today 2/8/26 we also get @daopaeguy opae hoʻi available — come through gangy Note: kanaka no like call da continent “the mainland” their mainland is of course “Hawaii”. They are justified in this, however I say “the mainland” because this is an awareness video, and I can shine light on this topic too. 🚨Limu Kohu Poke SOLD OUT
