As autumn settles in and winter approaches, British brown crabs come into peak condition with sweet, rich meat. The perfect opportunity to road test my new @yeti carbon steel wok and carbon steel griddle with this warm, comforting crab curry. Note: this could be the best curry I've ever made. Save the recipe, you won't regret it. Prepare crabs: Cook 2 brown crabs (600-800g ea). Pick brown meat, separate and crack claws, and chop body pieces. Set aside. Spice mix: Gently toast 6 tsp coriander seeds, 3 tsp cumin seeds, 3 tsp fennel seeds, 2 tsp fenugreek seeds, 2 tsp black peppercorns, 3 dried red chillies until aromatic. Add turmeric and grind to a fine powder. Set aside. Curry: Heat 2 tbsp oil in the YETI Carbon Steel Wok over medium-high heat. Gently fry 2 diced onions, 2 tsp mustard seeds, 20 fresh curry leaves, and 1 cinnamon stick until onions are soft. Add 60g grated ginger, 5 minced garlic cloves, and spice mix. Cook for 1-2 minutes, stirring regularly. Add 400ml coconut milk, 1 tbsp tamarind paste, 1 tsp brown sugar, and a good splash of water. Reduce heat to medium, season with salt to taste, simmer 8–10 minutes. Stir in crab meat, claws, and bodies. Simmer for 4–5 minutes to heat through. If needed, adjust consistency with a splash of water until just thick enough to coat the crab nicely. Serve with a stack of warm flatbreads and steaming rice. #BuiltForTheWild Video: @matt_austin_images
